BJs

We try to eat a meatless meal at least once a week.  The reason we do this is to cut down on our grocery bill and to try and get more veggies and whole grains into our diets.  Most of the time our meatless meals consist of pasta but there are so many other ways to do this, I just always seem to fall back on the regular ideas!

BJ’s Wholesale Club sells everything you need for all your meals each week, including meatless meals.  Their produce department is even bigger than their meat department!  Some items you do have to purchase in bulk packages but not everything.

I’m always looking for a new veggie side dish recipe so I was happy to see this one from the Bjs.com website…..

Confetti Salad

Servings: 8 | Prep Time: 14 minutes | Cook Time: 10 minutes

Ingredients

½ Red Onion, chopped
1 cup cooked Fresh Corn Kernels (about 3 ears)
1 cup diced Zucchini (1 small squash)
1 cup diced Yellow Squash (1 small squash)
1 cup chopped Green Beans (1″ pieces)
1 cup chopped Tomato (1 large)
1 Green Pepper, diced
½ cup Balsamic Vinaigrette
1 – 2 Jalapeño Peppers, finely diced (optional)

Preparation

  1. Set up a large bowl of ice and water. On stove or side burner of gas grill, bring a large pan of salted water to boil.
  2. Using cooking basket, boil green beans for 1 minute, then immediately plunge into ice water.
  3. Repeat with squashes, cooking 3 minutes before plunging into ice water.
  4. Transfer cooked vegetables to large salad bowl with rest of ingredients; gently toss.
  5. Serve as a side salad or spoon into hollowed-out tomato halves.

This looks delicious and I love the variety of veggies in the salad.   It would make a great dish anytime of the year but especially as spring arrives!  And you can easily find all of these fresh ingredients at BJ’s Wholesale club.  You could experiment with veggies and dressings to find something everyone in your family loves.  I think adding fresh peas to this would also be great.
