Spring is here and we are going to try to be outside as much as we can. But of course that means we may have to eat while out. To save money and eat healthy, we are going to try to pack lunches as much as we can. Arnold/Brownberry/Oroweat Breads wants to help by encouraging healthy eating any time of the day. Their bread isn’t just for toasting in the morning (though it’s really good with jam or peanut butter!) Their sliced breads are perfect for lunches on the go and packed with nutrition!

My daughter’s aren’t as adventurous with sandwiches, they enjoy Peanut Butter and Jelly or Turkey Sandwiches but I like to add more to my sandwich, especially crunchy items! This recipe for on the go Finger Sandwiches sounds so good and I can’t wait to make some the next time we head out for the day.

Healthy On-The-Go Finger Sandwiches

Ingredients
Finger Sandwiches_0208 slices Arnold® Health-full® Flax & Fiber bread
4 oz. nonfat cream cheese, softened
1 tbsp. fresh snipped chives
1/2 tsp. dried dill
1/4 tsp. salt
1 c. mixed fresh vegetables (cucumber, radishes, colorful bell peppers), thinly sliced
1/2 c. broccoli sprouts

Serving Size:
4 servings

Directions
In a medium bowl using an electric mixer beat cream cheese, chives, dill, and salt. Spread mixture on 4 slices of bread. Arrange sliced vegetables on cream cheese and top with broccoli sprouts. Place remaining slice of bread on top, and cut into 4 equal rectangles (you can trim crusts, if desired).
